Right now is the best season to get unbelievable tomatoes from local John’s Island farmers. Because of this, tomato pie because an easy summer meal that is sure to please a crowd. I made it for supper the other night and it was delicious! Thought I would share the recipe with you…enjoy!

 

START WITH…
1 9-inch pie shell
1/2 yellow or red onion, chopped
3-4 tomatoes, cut in half horizontally, squeezed to remove excess juice, roughly chopped, to yield approximately 3 cups chopped tomatoes
1/4 cup sliced basil
2 cups grated cheese (combination of sharp cheddar and Monterey Jack, or Gruyere or Mozarella)
3/4 cup mayonnaise
1 teaspoon of  Tabasco
Salt and freshly ground black pepper
HOW TO…
1 Preheat oven to 350°F. Place pie shell in oven and cook for 8-10 minutes or longer until lightly golden. If you are starting with a frozen crust, you’ll need to cook it a little longer. If you are using a homemade crust, freeze the crust first, then line the crust with aluminum foil and pre-bake it for 20 minutes, then remove the foil and bake an additional 10 minutes.
2 Squeeze as much moisture as you can out of the chopped tomatoes, using either paper towels, a clean dish towel, or a potato ricer.
3 Sprinkle the bottom of the pre-cooked pie shell with chopped onion. Spread the chopped tomatoes over the onions. Sprinkle the sliced basil over the tomatoes.
4 In a medium bowl, mix together the grated cheese, mayonnaise, Tabasco, a sprinkling of salt and freshly ground black pepper. The mixture should be the consistency of a gooey snow ball. Spread the cheese mixture over the tomatoes.
5 Place in oven and bake until browned and bubbly, anywhere from 25 to 45 minutes.

We are so incredibly fortunate to travel the globe producing beautiful weddings for the kindest couples. This ornate property is located in the heart of Savannah, GA. One walk around the gardens will take you back to the antebellum days!

3) Gorham’s Bluff

This Alabama stunner boasts gorgeous views. Their patios are the perfect place to sip a cocktail and watch the sunset!

4) Capital Hotel

Located in Little Rock, Arkansas, The Capital Hotel is known for making all their own breads, jams and preserves! 

5) Harborview Hotel

We fell in love with this charming hotel’s bright blue rocking chairs while doing a wedding in Martha’s Vineyard

The Seagate Hotel

This seaside hotel brings modern elegance to the quirky town of Delray Beach, Florida

The Breakers

This Palm Beach Hotel is often the location of the super fun Engage Conference!

8 ) The Nomad

This is our new favorite place to stay in NYC! It’s budget friendly but still beautifully decorated. Added bonus is the fab restaurant located in the hotel.

Nothing makes an expecting mother feel more loved than being surrounded by friends and family for a baby shower! We were so honored to be able to design a baby shower for our good friend, Lee. She was a previous bride of ours that loved her wedding color scheme of fresh green and white so much that she asked for it to be incorporated into the baby shower! We love getting out of the “wedding mind-set” and doing something new and exciting. We took our green inspiration and create a crisp, chic shower equipped with a guessing game to match guests with with their baby pictures…fun, right? Between mini cakes and beautifully decorated presents, this shower was such a fun experience. Here are a few pictures to share with you!
